Asian Chicken is a great post workout meal and/or healthy weeknight dinner. This is not only a well-balanced meal, but is packed with flavor, with a hint of saltiness from the soy sauce and the sweetness of the honey and roasted peppers. 





Serves: 2Prep: 20 minutesCook: 30 minutes


Ingredients:

1 chicken breast

2 roasted red pepper halves, sliced

2 tbsp soy sauce, reduced sodium

2 tsp sesame oil

1 tbsp honey

1 slice fresh ginger root½ cup rice, recommend: brown or jasmine rice

1 tbsp cilantro, chopped - garnishSesame seeds, black - garnish


Directions:

In a small bowl combine the soy sauce, sesame oil, honey and ginger root, stir until well combined. Pour the marinade into a resealable bag along with the chicken breast and marinade for 15 minutes.While chicken is marinating begin cooking rice according to package directions.Preheat a griddle pan to a medium high heat, drain marinade from the chicken breast and pour into a sauce pan and boil for 5 minutes. Set aside for basting the chicken.Lightly oil the griddle and cook chicken on the griddle for 6-8 minutes per side until an internal temperate for 165 degrees. Basting frequently with the marinade. Take chicken off of the griddle and set aside to rest for 5 minutes then slice into bite size pieces.Place half of the rice on a plate, top with half of the chicken, then half of the roasted red peppers and cilantro, sprinkle black sesame seeds over top. Repeat the process for the 2nd plate then serve and enjoy!*This dish can be made ahead of time and served cold.
