Baked Cheesy Potatoes are a hit at Sunday dinners in my family and perfect for a large holiday gathering. The creaminess of this side dish is sure to satisfy and keep your guests coming back for more. 

Serves: 8-10

Prep: 10 minutes

Bake: 45 minutes


Ingredients:

2 lbs Frozen Shredded Potatoes, thawed

1/2 cup Butter, melted

1-10 3/4 oz Cream of Chicken Soup

1 cup Sour Cream, light

2 cups Cheddar Cheese, shredded

2 tsp Salt

1 tsp Pepper

1 cup Corn Flakes, lightly crushed 


Directions:

Preheat oven to 350 degrees. In a large bowl combine potatoes, butter, cream of chicken soup, sour cream, cheddar cheese, salt and pepper; stir to combine well. 

Spray a 13x9x2 baking dish with nonstick cooking spray and pour the potato mixture into the dish. Spread out so the potatoes are an even layer then sprinkle the cornflakes over top. Place into the oven and bake for 45 minutes, serve and enjoy!


*This can be made the night before and kept in the fridge, then 1 hour before you’re ready to eat preheat your oven and then place potatoes in the oven for 45 minutes.
