Bananas, vanilla and cinnamon screams breakfast time. These pancakes are like no other pancakes that you have made before, they are delicious and extremely healthy.

1 tsp Vanilla Extract
1/4 tsp Cinnamon
In a large bowl mash the bananas with the potato masher or a fork until smooth. Add in the eggs and combine well with the mashed bananas. Stir in the vanilla extract, cinnamon and nutmeg.
In a pre greased pan over medium heat slowly ladle the batter onto the pan to form a pancake. (Using an electric pan will help control the temperature across the entire pan.) Cook for 2-3 or until the spatula easily slides under the pancake and the pancake is slightly browned. Flip and cook for an additional 1-2 minutes or until pancake is cooked through.
Serve with fresh fruit, syrup or both then enjoy!
