Moist cupcakes are the best, but when you fill your moist chocolate cupcake with a chocolate ganache and then top with a homemade frosting that is as fully as a marshmallow makes for an exceptional and a one-in-a-kind cupcake.

Makes: 2 dozen
Prep: 15 minutes
Bake: 20 minutes


Ingredients:
1 cup Buttermilk
1 cup Vegetable Oil
2 Eggs
3 cups Flour
2 cups Sugar
5 tbsp Cocoa Powder, unsweetened
2 tsp Baking Soda
1/2 tsp Salt
1 tsp Vanilla Extract
1 cup Boiling Water

Directions: 
Preheat oven to 350 degrees.

In a large mixing bowl mix together the buttermilk, oil and eggs; set aside. In another large bowl combine flour, sugar, cocoa powder, baking soda and salt; stir together to mix well. Slowly add the dry ingredients into the wet ingredients, beating as you go. 

To the batter add in the vanilla extract and boiling water. Spoon batter into a cupcake pan lined with cupcake liners. Fill 3/4 way to the top and place in the oven for 18-20 minutes or until a toothpick comes out clean when placed in the middle of the cupcake. Take cupcakes out of the oven and cool completely. Fill and top with the ganache and frosting recipe below.

Chocolate Ganache:

Makes: 1 cup
Prep: 2 minutes
Cook: 5 minutes

Ingredients:
1 cup Chocolate Chips (recommend: Dove Chocolate)
2 tsp Chocolate Syrup
2 tbsp Half-n-Half
1 tbsp Butter

Directions:
Place all ingredients in a heat safe bowl over a double boiling system and heat until chocolate has melted. 

Cut a cone shape in the middle of the cupcake and spoon the ganache inside the cupcake. Then top with frosting, find recipe below.


7-Minute Frosting

Makes: 4 cups
Prep: 2 minutes
Cook: 7 minutes


Ingredients:
2/3 cup Sugar
2 tbsp Water
1/3 cup Corn Syrup
1/4 tsp Cream of Tarter
1/4 tsp Salt
2 Egg Whites

Directions:
Set up a double boiling system by having a heat safe bowl over a pot of water that is simmering. (Be sure the water does not touch the bottom of the bowl.) To the bowl add in the sugar, water, corn syrup, cream of tarter and salt. Beat ingredients together until well combined. Then add in the egg whites and beat until the frosting forms a stiff peak, about 7 minutes.
