The crunch and cheesy topping for these beautiful heirloom tomatoes makes for a great side dish recipe.
Prep: 10 minutes
Cook: 3 minutes
4 Heirloom Tomatoes, sliced ¼ inch thick. (Use home grown tomatoes if you have them!)
¼ cup Asiago Cheese, shredded
1 cup Panko Bread Crumbs
1 tsp Salt
1 tsp Pepper
1 tbls Parsley, chopped
Preheat broiler to high.
Slice tomatoes and place on a baking sheet.
In a separate bowl combine the asiago cheese, panko bread crumbs, salt, pepper and parsley. Stir to combine, then evenly divide the cheesy herb breading mixture on top of the tomatoes.
Place tomatoes on the top rack of the oven under the broiler for 2-3 minutes or until the cheese has melted. Serve and Enjoy!
