Foods cooked “en Papillote” - in a bag, only intensifies the flavors of what is being cooked. This main dish recipe makes eating healthier and cleaner look almost too easy.

Ingredients:
2-6oz Tilapia Fillets
Olive Oil
Salt and Pepper
1 Zucchini, julienne 
1 Carrot, peeled and julienne
1/4 cup Red Onions, thinly sliced
4 Lemon Slices


Directions: 
Preheat oven to 375 degrees. 

Place each tilapia fillet onto separate parchment papers that are shaped into a large square. Drizzle a little olive oil over each fillet and season with salt and pepper. Evenly divide the zucchini, carrots, red onions and lemon slices, and arrange over each fillet. 

Seal up the parchment paper by crimping the edges to form a half moon shape. The other option is to fold the open ends and then staple the open areas closed, the object is seal the packet so no steam will escape. 

Place the fish packets onto a baking sheet and place in the oven for 15 minutes or until the fish is cooked through. Open the packets, serve and enjoy!
