Green bean casserole is one of those comfort food side dishes. Enjoy this version that uses much more fresh veggies than those just in a can.

Cook: 45 minutes
Serves: 4


Ingredients:
2 cups green beans, chopped
2 tbls butter
2 cup baby bella mushrooms, quartered
2 cloves of garlic, minced
2 tbls flour
1 cup chicken stock
¾ cup half-n-half
1/8 tsp fresh grated nutmeg
Salt and pepper, to taste
¾ cup fried onions, Recommend: Frenches Fried Onions


Directions:
Preheat oven to 350 degrees.


Bring a large pot of water up to a boil, salt the water and add in the green beans. Cook for 5 minutes and transfer to an ice bath to stop the cooking process.


Place a skillet on a medium-high heat and add in butter and mushrooms, cook for 5 minutes. Stir in garlic and cook for another minute. Add flour to the mushrooms and stir for 2 minutes then whisk in stock. Turn heat to a medium and stir in half-n-half. Season with the nutmeg and salt and pepper, stir to combine.


Toss the green beans into the mushroom cream sauce and stir in the fried onions. Place into a casserole dish and place in the oven for 30 minutes.
