Grilled Peaches and Couscous with Balsamic Reduction is an elegant side dish to serve that will impress your guests.

Prep: 5 minutes

Cook: 8 minutes


Ingredients:

1 cup Balsamic Vinegar

1 tbls Sugar

1 cup Water

1 cup Couscous

2 Peaches, slice into ½ inch thick (2 slices/peach)


Balsamic Reduction:

Place balsamic vinegar and sugar into a sauce pan and bring to a boil. Once it has boiled turn down to a medium-low heat until it reaches a syrup-like consistency. Approximately 8 minutes.


Couscous:

Bring water up to a boil then pour in couscous and cover with a lid. Turn heat off and let sit for 5 minutes, then fluff with a fork.Grilled


Peaches:

Preheat Grill to a medium-low heat. Slice up peaches and place on the grill. Cook 2 minutes per side.Assemble the side dish with couscous on the bottom, a grilled peach in the middle and drizzle with the balsamic reduction. Serve and Enjoy!


*Hint: For nice presentation use a circle shape cookie cutter and pack the couscous inside. Slowly raise the cookie cutter, then place peach on top of the couscous and drizzle the plate with the balsamic reduction. Serve and Enjoy!
