Impress your company or family with this cheesy manicotti that will melt in your mouth on the first bite.

Bake: 40 minutes


Ingredients:
2 Tbsp Olive Oil
1/4 cup Onions, chopped
1 Garlic Clove, minced
5 oz Frozen Spinach, thawed
8 oz Ricotta
1 Egg
1/3 cup Parmesan, shredded
1/2 tsp Salt & Pepper
20 oz Marinara Sauce
6-8 Manicotti Pieces 
1/4 cup Mozzarella Cheese, shredded


Directions:
Preheat oven to 400˚F.


Place a medium sauté pan over medium heat and drizzle in olive oil. Add onions into the pan and sauté for 10 minutes until slightly caramelized. Stir in minced garlic and cook for an additional minute. 


Take 5 oz of frozen spinach and place onto a microwavable bowl and heat for 1 minute. Place the thawed spinach onto a paper towel or kitchen towel and ring out the excess water. 


In a large bowl add in the ricotta cheese, onions and garlic mixture, spinach, egg, parmesan cheese, salt and pepper; stir to combine well.

Bring a large pot of water to a boil and season liberally with salt. Add in the manicotti pieces and cook to package instructions. 


Drain manicotti then begin stuffing the manicotti with the ricotta mixture, repeat the process until all the manicotti pieces are stuffed. 


Spread a small layer of marinara sauce onto the bottom of a heat proof baking dish. Place the stuffed manicotti in a single layer in the baking dish. Then pour the remaining marinara over the top of the manicotti. Cover the baking dish with aluminum foil and bake for 30 minutes.


Remove foil and sprinkle cheese on top of the manicotti and place back into the oven for 10 minutes, just allow for the cheese to melt. Remove the baking dish from the oven and allow to reset for 10 minutes before serving. Enjoy!
