Pizza pockets makes for a perfect snack for those hungry kids when they get home from a long day of school.

Bake: 10-14 minutes
Serves: 24 pizza pockets


Ingredients:

2 tbsp Olive Oil
1 lb Sweet Italian Turkey Sausage
1/4 Sweet Onion, grated
4 tbsp Tomato Paste
Salt and Pepper, to taste
1 Pizza Dough, store bought
Flour, dusting
1 cup Mexican Blend Cheese, shredded
1 Egg, beaten
Pizza or Marinara Sauce, for dipping


Directions:
Preheat oven to 400 degrees. 

Place a skillet over medium-high heat and add in the olive oil, turkey sausage and cook until browned, about 7 minutes. Stir in the grated onion and cook for an additional 1 minute. Add the tomato paste and cook on low for 2 minutes, season with salt and pepper.

Roll the pizza dough out to 1/4 inch thick and cut into 3x3 inch squares. Fill the pizza squares with 2 teaspoons of turkey sausage mixture and a sprinkle of cheese. Fold the bottom right corner of the pizza dough to the top left corner to form a triangle. Use the teeth of a fork to seal the sides of the dough that is open. 

Place pizza pockets onto a baking sheet with a cooling rack on top, this will help the pizza pockets to crisp on all sides. Brush egg wash over each pizza then place the baking sheet in the oven and bake for 10-14 minutes or until the pizza pockets become golden brown. Serve with pizza or marinara sauce and enjoy.

*Tip: Freeze pizza pockets by cooling them and placing them in a resealable bag. Freezes up to 3 months.
