Popsicles are a great snack for those warm month and a great way to keep the kids busy this summer by making their own popsicles. The root beer popsicle resembles the classic root beer float, lemon-lime popsicle is a packed with vibrant flavors and the mango-ginger is refreshing and there are many different ways you could change this recipe with the fruits you enjoy.


A twist on a classic with the layers of frozen root beer and a vanilla custard is like having a root beer float on a stick.


Root Beer Popsicles


Makes:12-14 ice pops

Prep: 10 minutes

Cook: 12 minutes


Ingredients:

1 cup Heavy Cream

1 cup Whole Milk

4 large Egg Yolks

1/3 cup Sugar

1 tsp Vanilla Extract

Pinch of Salt

2 cups root beer (open 30 minutes before using)


Directions:

In a large sauce pan over medium-high heat add in the heavy cream and whole milk. Warm cream and milk just before it comes to a simmer. In the meantime, in a heat proof bowl, add in the egg yolks, sugar, vanilla extract and a pinch of salt. Whisk ingredients together for 2 minutes or until mixture has doubled in size and has become a pale yellow. Slowly ladle in warm cream and milk into the egg mixture and whisk vigorously until eggs become the temperature of the milk. Place liquids back into the sauce pan and place over medium heat. Stir with a wooden spoon for about 5 minutes or until the mixture thickens enough to coat the back of the wooden spoon. Do not let it boil. Strain through a sieve into a bowl and place bowl over ice bath and cool completely. 


If using a traditional ice pop mold, fill 1/4 of the way full of the vanilla mixture and partially freeze, about 30 minutes. Pour in root beer to about 1/2 full and freeze for an additional 30 minutes. Pour in vanilla mixture to fill to 3/4 full and place popsicle stick in the middle, freeze for 30 minutes. Finish the mold by pouring in the root beer and freeze completely, about 1 hour. (Not recommended for instant ice pop makers as the root beer portion will not remove from the mold.) ENJOY!

Lemon-Lime Popsicles


Makes: 10-12 ice pops
Prep: 5 minutes
Cook: 5 minutes


Ingredients:
1/2 cup Water
3/4 cup Lemon Juice
1/2 cup Lime Juice
3/4 cup Sugar
2 tbsp Orange Juice


Directions:

Place all ingredients into a sauce pan over medium-high heat and bring to a boil. Cook until the sugar is dissolved. Allow lemon-lime simple syrup come to room temperature before placing into molds. If you are using an instant ice pop maker they will be done in 10 minutes, otherwise place into the mold and in the freezer for at least 3 hours. ENJOY!

The sweetness of the mango pairs perfectly with the spicy ginger syrup. Mango-Ginger Popsicles are a refreshing treat during those summer months.


Mango-Ginger Popsicles


Makes: 10-12 Ice Pops
Prep: 5 minutes
Cook: 5 minutes


Ingredients:
1/2 cup Water
1/3 cup Sugar
1 Thin Slice of Ginger
2 Mangos, peeled and chopped
2 tbsp Lime Juice
4 Strawberries, thinly sliced (if using a instant ice pop maker)


Directions:

Add water, sugar and ginger slice into a sauce pan over medium-high heat until the sugar dissolves, about 5 minutes. Allow for ginger simple syrup to come to room temperature.


In a blender add in the mangos, simple syrup and lime juice, puree until smooth. If using an instant ice pop maker, add the strawberries to the side and then the mango mixture and wait for 10 minutes for the pops to freeze. If using a traditional mold, pour mixture into mold and freeze for 1 hour then add in the stick and freeze for at least another 2 hours. ENJOY!


(This recipe can be altered in many different ways. Substitute any fruit, instead of ginger use lemon or lime peel.)
