Warm up this fall season with these delicious pancakes. It is like eating a pumpkin pie for breakfast!


Makes: 8 pancakes
Prep: 5 minutes
Cook: 10 minutes

Ingredients:
3/4 cup Milk
1 tsp Vanilla Extract
2 Tbsp Butter, melted
1 Egg
6 oz Pumpkin Puree
2 Tbsp Sugar
1 cup Flour
1 tsp Baking Powder
2 tsp Pumpkin Pie Spice
Pinch of Salt

Directions:
Set an electric grill pan to 325˚ F.

In a large bowl add in the milk, vanilla extract, butter, egg and pumpkin puree; whisk until combined. Into the wet ingredients add in the sugar, flour, baking powder, pumpkin pie spice and salt; stir together. (If there are a few lumps in the batter that's ok.)

Spray the electric grill pan with nonstick cooking spray. Ladle in the pancake batter and top each pancake with the sliced strawberries. Allow for the pancake to cook, the pancakes is ready to flip once is forms bubbles on the top. Flip with a spatula and cook for an additional 2 minutes. Repeat the process until all the batter is used. Serve with syrup and whipped cream and enjoy!


Maple Whipped Cream

Makes: 1 cup
Prep: 2 minutes

Ingredients:
6 oz Heavy Whipping Cream
2 Tbsp Maple Syrup

Directions: 
Combine all ingredients together and whip until cream forms stiff peaks and enjoy!
