Roasted red pepper hummus has a sweet and nutty flavor that pairs well with a crunchy crostini.

Ingredients:
1-15 oz can chick peas, drain and rinse
1 whole roasted red pepper, seeded + more for garnish
2 tbls tahini paste
2 garlic cloves, minced
1-2 lemons, juiced
3 tbls fresh parsley
¼ - ½ cup extra virgin olive oil
Salt and pepper, to taste
1 loaf French bread
Olive oil

Directions:
Preheat broiler to high.


Combine chick peas, roasted red peppers, tahini paste, garlic, parsley, the juice of 1 lemon, salt and pepper in a food processor. Then turn on the food processor and drizzle in extra virgin olive oil until it is a smooth consistency. After processing taste to see if more lemon juice, salt and/or pepper needs to be added, then pulse again.


Slice bread into ½ inch slices and place onto a baking sheet. Drizzle olive oil over the bread and place under the broiler. Toast the bread which will take about 2-3 minutes.


Place a dollop of roasted red pepper hummus on the crostini and garnish with roasted red peppers. Serve and Enjoy!
