salsa chicken nachos

Quick and easy Salsa Chicken is a healthy and simple dinner that is packed with flavor thanks to Simply Appetizers salsa. Make this a heartier meal by serving it with rice and beans.

Cook: 25 minutes


Ingredients:
4 Boneless Skinless Chicken Breasts
4 Tbsp Taco Seasoning, reduced sodium
2 Tbsp Olive Oil
1 cup Simply Appetizers Salsa
1 Green Pepper, seeded and sliced into rings
1/4 Red Onion, sliced into rings
1/2 cup Corn, optional
1 Sliced Jalapeño, optional
1 Lime, sliced into wedges 
2 Tbsp Fresh Cilantro, chopped


Directions:
Preheat oven to 350˚F. 


Sprinkle 1 tablespoon of taco seasoning evenly on the front and back of 1 chicken breast; repeat the process for the remaining 3 chicken breasts.

Drizzle olive oil on a skillet over hight heat and place the seasoned chicken breasts on the skillet. Cook for 2 minutes, or until browned, on the first side. Flip the chicken breasts and repeat the process to brown the second side. Remove chicken from the skillet.


Place each chicken breast onto a sheet of aluminum foil. (Each chicken breast will have its own 12x15 sheet of aluminum foil.) Spoon over Simply Appetizers salsa evenly over each chicken breast. Place a couple rings of green peppers and red onions over top of each breast. (Top the chicken breast with more ingredients such as corn and/or jalapeños, if desired.) 


Seal the aluminum foil around the salsa chicken and place onto a baking sheet, finish cooking the chicken in the oven for 20 minutes or until the chicken reaches and internal temperature of 165˚F. 


Remove chicken from the oven and rest for 5 minutes to allow for the juices to redistribute. Take the salsa chicken out of the package and place onto a plate. Garnish with a fresh lime wedge and fresh cilantro. Serve and enjoy!
