This summer bean salad is filled with fresh vegetables and 2 kinds of bean which is an ideal side dish but hearty enough for a main dish.
Prep: 10 minutes
1 can Black Bean, drain and rinse
1 can Chick Peas, drain and rinse
3 Roma Tomatoes, chopped
1 Cucumber, chopped
1 Orange Pepper, seeded and chopped
¼ cup Red Onion, chopped
2 Avocados, chopped
2 Limes, juiced
2 tbs Cilantro, chopped
Salt and Pepper, to taste
*Optional: 1 Jalapeno, seeded and finely chopped
Combine all ingredients into a large bowl and toss. Serve and Enjoy!
