The southwest flavor combinations and the crunchy outside texture of this chicken strip will leave you forgetting all about those fried chicken strips you get at the restaurants ands get you cooking up this healthy and easy recipe in the comfort of your own home.


Serves: 3 

Prep: 5 minutes

Bake: 15 minutes


Ingredients:

1 lb Chicken Tenders

3/4 cup Panko Bread Crumbs

1/2 cup 4-Cheese Mexican Cheese

1 tbsp Chili Powder

1 tbsp Paprika

2 tsp Cumin

2 tsp Garlic Powder

1 tsp Salt

1 tsp Pepper


Directions:

Preheat oven to 375 degrees.


In a large bowl add in Panko bread crumbs, cheese, chili powder, paprika, cumin, garlic powder, salt and pepper; stir to combine.


Toss the chicken tenders in the bread crumb mixture. (May need to add a little water or olive oil to chicken breasts to moisten to allow for mixture to stick to the chicken.) Place chicken tenders onto a baking sheet lined with aluminum foil. (Optional: Place chicken strips on rack over baking sheet to keep strips crispy all around.) Bake for 15 minutes or until chicken reaches an internal temperature of 165 degrees. 


Serve with chipotle ranch and roasted sweet peppers (recipes below) and enjoy!


Chipotle Ranch Recipe:

Ingredients:

4 oz Light Ranch Dressing

3 Chipotle Peppers in Adobo Sauce, seeded and chopped


Directions:

Place ingredients into a bowl and stir.


Roasted Sweet Peppers Recipe:

Prep: 2 minutes

Bake: 10 minutes


Ingredients:

1 Yellow Pepper, seeded and sliced

1 Red Pepper, seeded and sliced

1 tbsp Olive Oil

Salt and Pepper, to taste

1/4 tsp Red Pepper Flakes (optional)


Directions:

Preheat oven to 375 degrees. Place peppers on a baking sheet lined with aluminum foil, drizzle olive oil over top and season with salt, pepper and red pepper flakes (optional). Bake for 10 minutes or until tender and enjoy!
