White Bean chili


This chili is a crowd pleaser, packed with hearty beans, chunks of chicken and seasoned to perfection. No doubt this recipe will leave your guest full and satisfied.

Cook: 45 minutes


  • 2 Tbsp Olive Oil
  • 1 lb Chicken Breasts, cubed and seasoned with Salt and Pepper
  • 1 Onion, chopped
  • 3 Garlic Cloves, minced
  • 1 Jalapeño, seeded and finely chopped
  • 2 Tbsp Chili Powder
  • 2 tsp Cumin
  • 2 tsp Oregano, dried
  • 2 cans Cannellini Beans, rinsed and drained
  • 4 cups Chicken Stock, reduced sodium
  • 1 can Green Chilies, mild
  • 1/4 cup Cream
  • Optional Garnishes: Cilantro, Sour Cream and/or Avocado

In a large pot over high heat add in olive oil along with the seasoned chicken breast; brown for 5 minutes. Turn heat to medium and add in onions, cook for 5 minutes or until translucent. Then add in garlic and jalapeños and cook for an additional 2 minutes. 

Season chicken and vegetables with chili powder, cumin and oregano; stir to combine. Add the cannellini beans, chicken stock, green chilies into the pot; stir to combine and simmer for at least 30 minutes. Right before serving add in cream and turn heat off. Serve white bean chili with a variety of garnishes if desired and enjoy!
